Instructions
Step 1
Preheat oven to 350° F. Prepare loaf pan with no -stick cooking spray or parchment paper.
Step 2
In a large mixing bowl, cream together butter and sugar.
Step 3
Add eggs, then mix in mashed banana and pineapple.
Step 4
In a separate bowl, combine flour, baking powder, baking soda, and salt.
Step 5
Gradually add dry ingredients to wet ingredients.
Step 6
Stir in shredded coconut.
Step 7
Pour batter into prepared loaf pan. Bake for 1 hour.
Step 8
Allow the bread to cool completely before removing from pan and slicing.
