Instructions
Step 1
Preheat oven to 425° and position to top rack. Roughly chop fronds from dill.
Step 2
Pat pork dry with paper towels and season generously with salt and pepper. Heat a large drizzle of olive oil in a large pan over medium high heat. Add pork and sear, turning occasionally until brown all over, 4-8 minutes. Turn off heat and transfer pork to a baking sheet.
Step 3
Roast on top rack for about 12 to 15 minutes. Remove from oven and transfer pork to a cutting board to rest for 5 minutes.
Step 4
Heat pan used for pork over medium high heat and add the chicken stock concentrate and a third cup of water. Bring to a simmer and cook one to two minutes.
Step 5
Reduce heat to low and whisk in sour cream, the chopped dill and mustard to taste. Turn off heat and stir in two tablespoons of butter and any resting juices from the pork. Season with salt and pepper and red chili flakes to taste.
