Instructions

Step 1
For 1kg of salmon filet, you want 250g salt and sugar (500g total)
Step 2
Put down plastic wrap on a cookie sheet.
Step 3
Rub some of the mixture on the skin side. Place the filet on the plastic-lined sheet other side down. Cover the filet with remaining mixture.
Step 4
Cover with plastic wrap. Put a cutting board or something flat on top and add weight. Leave in the fridge for 24 hours.
Step 5
Rince off the filet. Slice on an angle, put in a container with lots of fresh dill and enough olive oil to coat it all. You can also add capers.
Step 6
After rinsing, the gravlax can also be frozen.
