Instructions

Step 1
1. Preheat oven to 350F. Add parchment paper to (or use non-stick spray) an 8x8" baking pan. 2. Add sweet potatoes, peanut butter, cocoa powder and vanilla to a medium bowl, and mix at medium speed till well blended. Check for sweetness and add between 2 to 4 tablespoons of maple syrup if desired. 3. Add eggs, then blend again till they're fully incorporated. 4. Scrape batter into prepared pan and bake for 25-30 minutes, or until the top looks cooked. 5. Allow the brownies to cool completely before cutting! You might need to clean the knife blade between each cut. Refrigerate any leftovers.
