Instructions
Step 1
* In a stand mixer or a bowl, activate the yeast by combining it with sugar and lukewarm milk. Let it sit for 10 minutes to bubble and froth.
Step 2
* Add half of the flour, melted butter, egg, vanilla powder, and salt to the yeast mixture. Mix well to form a dough. Gradually add the remaining flour and continue mixing until a soft dough forms. Cover the bowl with a clean kitchen towel and allow the dough to rise in a warm place for 1 hour.
Step 3
* While the dough is rising, prepare the blueberry filling. In a saucepan, combine blueberries, cornstarch, icing sugar, lime zest, and lime juice. Heat the mixture while stirring continuously until it thickens and comes to a boil. Remove from heat and let it cool.
Step 4
* Once the dough has risen, transfer it to a flat working surface and knead for a few minutes. Roll the dough out into a rectangle approximately 40 cm by 30 cm in size.

* Spread half of the prepared blueberry filling evenly over the dough. Starting from the shorter side, tightly roll the dough into a log.
Step 6
* To slice the dough without deforming it, place a thread under the roll, cross the thread on top, and pull the ends in opposite directions. Divide the rolled dough into pieces about 4 cm each.

* Place the cut rolls in a buttered baking dish, leaving space between them to allow for rising. Cover the dish with plastic wrap and let the rolls rise in a warm place for 15 minutes.

* Preheat the oven to 180°C (350°F).

* Once the rolls have risen, prepare the egg wash by whisking together the egg yolk and milk. Brush this mixture over the top of the rolls.

* Bake the rolls in the preheated oven for 20-30 minutes or until they are golden brown.

* While the rolls are baking, make the syrup. In a small saucepan, combine water, sugar, and lemon juice. Bring the mixture to a boil over low heat and let it simmer for 5 minutes. Remove from heat and set aside.
Step 12
* Once the blueberry rolls are done baking, remove them from the oven and immediately brush them with the prepared syrup. Sprinkle toasted almond flakes over the top for a delightful garnish.

* Your delectable blueberry bliss rolls are now ready to be enjoyed! Serve them with the remaining blueberry sauce for an extra burst of flavour.
