Crunchy peanut shredded salad

1. Cook the quinoa according to the package directions. Set aside and allow a cool. 2. Combine the quinoa with all the remaining ingredients, except the dressing, in a large serving bowl and toss. Drizzle the peanut dressing over the top when ready to serve.
