Instructions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a large bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.

Heat the olive oil in an oven-safe skillet over medium heat. Add the onion, bell pepper, and zucchini. Cook until the vegetables are tender, about 5-7 minutes.
Step 4
Pour the egg mixture over the vegetables in the skillet. Sprinkle the cherry tomatoes and crumbled goat cheese on top.
Step 5
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the middle and the edges are golden brown.
Step 6
Remove from the oven and let it cool slightly.
Step 7
Drizzle with balsamic glaze and garnish with fresh basil or parsley.
Step 8
Slice and serve warm or at room temperature.
