The cake

2 tspcinnamon powder

100gflour

1 cupbrown sugar

200gbutter
room temperature

90mlmilk

2 tspbaking soda

300gmilk Chocolate
melted

2eggs

egg white

caster sugar

1 Tbspvanilla extract

10mlrapeseed oil
The frosting

200gcream cheese
room temperature

200mlwhipping cream

1 tspmint extract

200gdark chocolate
melted

1 Tbspmatcha powder
Decoration
Instructions
The cake
Step 1
Add the egg, then sift the flour





Step 2
Add cinnamon powder and baking soda



Step 3
Add brown sugar, milk, and butter





Step 4
Whisk the egg white for 10 minutes until it's frothy, Add caster sugar then whisk for 5 minutes until it's thick and glossy

Add the melted chocolate

Mix it with a spatula for 5 minutes

Add the chocolate mixture then mix

Step 8
Add the rapeseed oil to the cake pan

Pour the mixture to the cake pan

Bake in 175°C for 25 minutes, 5 seconds

Let cool for 10 minutes

The frosting
Step 12
Add whipped cream and mix for 6 minutes

Add the cream cheese and continue mix for 5 minutes until it's frothy


Step 14
Add mint extract, then divide into 2 bowls

In the 1st bowl, add chocolate.

In the 2nd bowl, add matcha powder

Mix both bowl with a spatula (or a whisk)


Assembly & decoration

Make sure the cakes are completely cool. Level the cake with a serrated knife if there are any remaining dome after cooling the cake upside down
Step 19
Place a single layer of cake on the cake turntable (make sure the cake is centered perfectly). Top the cake with chocolate cream, and spread the cream with an icing spatula or spoon. Repeat with the remaining cake layers.


Step 20
Top the assembled cake with the chocolate cream and smooth the top and sides. Use a spoon or spatula to create swirls in the cream.
Step 21
For decoration, fill a piping bag fitted with a star-shaped piping tip with the matcha cream. Pipe little mounds on top of the cake. Decorate with thin sliced strawberries and mint leaves.
