HALLOUMI, CHORIZO & SPRING ONION FOLDED EGGS π§πΆπ₯. Give your breakfast an upgrade with these delicious folded eggs.
A hybrid of scrambled eggs and an omelette, with silky, smooth ribbons.
The technique is similar to scrambling, except that you stir the eggs less and instead gently push them from the edge of the pan to the centre, which allows larger folds to develop, making them firmer but *super* silky π.
Plus you can flavour them with anything you like - I went for halloumi, chorizo & spring onion in mine and served on buttery, toasted crumpets which was *chef's kiss* ππ.
Recipe (serves 1):
π§ Heat a large non-stick frying pan over a medium heat with a little oil/butter. Once hot, add 30g cubed halloumi and 2 chopped spring onions.
πΆ Pan fry until the spring onion is softened, then add 20g cubed chorizo and cook for a further few minutes.
π₯ Whisk 2 large eggs with a pinch of salt & pepper, then pour into the pan.
π§ Turn the heat down to low then, using a spatula, push the eggs from the edge of the pan towards the centre. The uncooked egg should run into the gap created but if not, tilt the pan slightly.
πΆ Repeat this motion around the perimeter of the pan, slowly pushing the eggs into the centre until they are very nearly cooked (they will carry on cooking from the residual heat of the pan, so by the time you serve they will be perfect).
π₯ Serve on toasted crumpets/bagel or toast. Add a pinch of chilli flakes or some hot sauce if desired. Enjoy!
