Keto Nantucket Cranberry Pie
Quick, quick, head to the kitchen and gather the ingredients for this Keto Nantucket Cranberry Pie! It’s so easy to make and so, so delicious! The perfect holiday dessert.
I kid you not when I say this is easy. You simply toss some cranberries with Swerve Granular, make a buttery batter with almond flour and more Swerve Granular, and bake until golden. Then dust with a little Swerve Confectioners and you’re ready to go.
Part pie, part cobbler, all delicious!

Instructions
Step 1
Preheat the oven to 325ºF and grease a 9-inch glass or ceramic pie plate.
Step 2
In the bottom of the plate, add the cranberries, ⅓ of the Swerve Granular, and the sliced almonds. Toss to combine well.
Step 3
In a large bowl, beat the butter with the remaining Swerve Granular until light and fluffy. Beat in the eggs and almond extract. Then beat in the almond flour until well combined.
Step 4
Spread the batter over the cranberries in the plate. If desired, top with a few more sliced almonds.
Step 5
Bake about 50 minutes, until the top is golden and just firm to the touch. Remove and let cool, then sprinkle with Swerve Confectioners.
Step 6
Serve with lightly sweetened whipped cream, if desired.
