Instructions
Step 1
Preheat oven to 350°F. Grease and line an 8x8-inch pan with parchment paper.
Step 2
Brownie Layer: Whisk eggs, sugar, and vanilla together until well combined. Whisk in melted butter and food coloring. Finally, whisk in flour, cocoa powder, and salt until well combined. Spread all but about 3 tablespoons into the prepared baking pan.
Step 3
Cheesecake Filling: In a separate bowl, beat together the filling ingredients until well combined.
Step 4
Pour the cheesecake filling over the brownie batter in the baking pan. Dot with remaining brownie batter, and swirl with a butter knife.
Step 5
Bake in the center of the oven for about 30 minutes or until a toothpick inserted into the middle comes out clean.
Step 6
Remove from oven and let cool completely before slicing and serving.
