It's easy and mouthwatering deliciousness! πŸ˜‹πŸ‘ŒπŸ» Recipe (makes 24 mini puddings) 500gr pitted dates Boiling water to cover (approx 2 cups) 2 tsp bi carb soda 200gr unsalted butter room temp 1 1/4cup brown sugar 4 eggs 1/2 tsp vanilla paste 2 cups self raising flour Butterscotch Sauce 300gr butter 3 cups brown sugar 600ml thickened cream 1/2 tsp vanilla paste 1. Preheat oven to 200Β°c Place pitted dates, bi carb in a bowl and cover with 2 cups of boiling water and set aside for 5mins 2. Use a stick blender or food processor and blend together remaining ingredients one at a time excluding flour (butter, eggs one at time, brown sugar and vanilla) 3. Sift in self raising flour and slowly fold through with spatula, if there are lumps thats fine just make sure to not overmix 4. Prep your cupcake tray by buttering and flouring them removing excess flour 5. Fill the cupcake mould 3/4 full, place in the oven for 14-16mins till skewer comes out clean 6. Allow to cool before removing from tray Butterscotch sauce ✨ 1. Place all your ingredients in the saucepan, allow to come to a simmer for 3-5mins then remove from heat and cool slightly Serve with vanilla Ice cream and enjoy πŸ‘ŒπŸ»πŸ˜‹ Note: You can bake these in advance and leave in an airtight container and sauce in bottle on the side, when ready to serve warm slightly in the oven
