Chocolate Covered Strawberry Brownies

The local Fyzical Therapy & Balance Center (northwest PA) sends newsletters once a month and it always includes a recipe. I'm all about quick and easy, and this definitely fits the bill! Besides...chocolate and strawberries?? Yum!! (Their recipe says to use an 8x8 baking dish for thr brownies, but I always opt for the 13x9 - your preference!)

Instructions

Step 1
Preheat your oven abd prepare the brownie mix according to package instructions. Use parchment paper to line your baking dish. (Their recipe says to use an 8x8 baking dish for thr brownies, but I always opt for the 13x9 - your preference!) Let brownies cool completely. Rinse strawberries, remove stems, then cut in half lengthwise. Arrange strawberries onto the cooled brownies, flat side down. Place chocolate chips into a glass bowl. In a separate microwave safe bowl, add 1 cup heavy whipping cream and heat in the microwave 1 to 2 minutes until steaming, not boiling. Pour the heated cream over the chocolate, then place a plate over thr bowl to trap heat. Let sit 3 to 4 minutes. Remove the lid from the bowl and whisk the chocolate and cream mixture until smooth and glossy. Pour the ganache over thr strawberries and brownies, smoothing with a spatula to cover completely. Refrigerate 15 to 30 minutes to allow the ganache to set before serving.
