A short recipe for a delicious dessert, you can substitute Double cream for heavy whipping cream, in experience the cheaper the cream the longer it takes to whip so don't feel like it's all over when it looks liquid-like, keep going. I do this all by hand with no issue.

Instructions

Step 1
Add cream to a mixing bowl and whip. Add sugar and vanilla and continue to whip. Add mascarpone and fold in.

Add coffee and baileys to a bowl. Dip half the sponge fingers (Remembering to NOT SOAK, quick dip) in and lay them in a single layer on a tray.

Step 3
Smooth half of the cream mixture onto the sponge fingers. Add another layer of dipped fingers. Smooth remaining cream over the top.

Dust cocoa powder over the top using a tablespoon or teaspoon, ensuring an even layer over the top, you can use as much as you'd like (Varying dependent on the cocoa you're using.)
