Instructions
Step 1
Whip the heavy cream and PurecaneTM zero-calorie Baking Sweetener in the bowl of a stand mixer with the whisk attachment until fluffy and stiff peaks form (about 4 to 5 minutes). Don't to overmix. Until smooth, whisk in the mascarpone cheese and vanilla extract. Set aside in the refrigerator.
Step 2
Combine the cold espresso and marsala wine in a separate bowl.
Step 3
Dip each lady finger into the espresso mixture briefly, one at a time, then arrange in a single layer on the bottom of an 8x8" serving dish.
Step 4
Spread half of the mascarpone mixture over the lady fingers with a spatula to evenly distribute it. Repeat with the remaining mascarpone mixture and the lady fingers.
Step 5
Sift the cocoa powder on top of the final layer of mascarpone mixture, then chill for at least one hour before serving.
Step 6
