Instructions
Step 1
Trim any large bits of fat from the meat and dice into very small chunks, approximately 1/2" x 1/2" (1.3cm x 1.3cm).
Step 2
Heat up olive oil in a pot.
Step 3
Add the finely diced onion and cook until translucent, then add the garlic and fry until soft and starting to pick up color.
Step 4
Add the diced meat and cook until the color changes.
Step 5
Stir in 2 tablespoons of flour and cook through.
Step 6
Add tomato paste, Worcestershire sauce, salt, and black pepper. Mix well.
Step 7
Pour in the beef stock and bring to a simmer. Reduce heat to low and let it simmer until the meat is tender with the lid on, stirring occasionally.
Step 8
Check for seasoning and adjust with salt and pepper if needed. Remove the meat to a side bowl and let it cool to room temperature.
Step 9
Roll out the puff pastry sheets and divide them into 4 even-sized rectangles (you will have 10 rectangles in total).

Place a few tablespoons of the cooked meat on one side of each rectangle. Place another square on top and use a fork to press around the outside of each one. Make a few slits on the top to create steam holes.

Brush the top with beaten egg wash.

Place the prepared steak bakes on a greaseproof baking tray (or parchment paper) and bake in the preheated oven at 200°C/390°F for 20-25 minutes, or until deep golden and visibly crisp with the gravy starting to leak out.

Allow the steak bakes to cool for a few minutes before serving.
