Instructions

Step 1
Prepare pasta water by combining 3 qts H2O with two healthy pinches of sea salt. Bring to a boil and use to cook pasta till al dente. Approximately 8 minutes. Make sure to reserve some pasta water for sauce method.
Step 2
Heat sauté pan and add EVO. Once hot add super finely sliced leeks and minced garlic and gently sweat out until translucent.
Step 3
Deglaze with white wine and reduce by half the add cream and simmer for 2 minutes.
Step 4
Add pasta to pan sauce. Season with Meyer lemon juice, crab, salt and add butter. Gently toss pasta and let simmer for another minute.
Step 5
Adjust consistency of sauce with remaining pasta water. Toss with chives and incorporate evenly.
Step 6
Use pasta fork or tongs to twist of pasta and place into bowl or plate. Spoon remaining sauce over pasta top with garlic bread crumbs and garnish with as much caviar as you feel is necessary.
