Instructions
Step 1
Heat oven to 180°C (two-sided heat; or 160°C circulating)

Step 2
Peel and core apples; cut in small (1/2'') cubes/pieces and place in bowl with acidic water (add a bit of lemon/lime juice or vinegar) to prevent discoloration


Step 3
In another bowl, mix flour with baking soda and salt; set aside




Step 4
In yet another, larger bowl, gently whisk soft butter with sugar, vanilla extract, lemon juice, half of cinnamon and milk until the mixture is well mixed and slightly foamy

Using a mixer, mix eggs in butter/sugar mixture one by one; do not add new egg until previous egg has been fully mixed in


Step 6
Very slowly add flour mix to butter/sugar/egg mixture while constantly stirring with the mixer

Step 7
Thoroughly drain apple pieces and carefully whisk into dough

Step 8
Apply butter to a springform pan, add dough and even surface


Step 9
Place spring pan in the oven and bake for 35-45 min; check occasionally and make sure the cake does not burn; cover surface with a sheet of baking paper if it turns brown

Step 10
In the meantime: Mix brown sugar, remaining half of cinnamon and chopped mint



Step 11
Add remaining butter to cake surface and evenly distribute brown sugar mix; bake for another 5-7 min


Step 12
Allow time for the cake to cool, then cut and serve with whipped cream
