Instructions

Step 1
Place the chicken breasts at the bottom of the crockpot. In a medium bowl, mix together pineapple juice, brown sugar, soy sauce, ketchup, Worcestershire sauce, garlic, and ginger. Pour this mixture over the chicken in the crockpot. Cook on low for 6 hours or on high for 3 hours, until the chicken is tender and fully cooked. If desired, add the sliced bell pepper and pineapple chunks during the last hour of cooking to retain their crunch and freshness. Once cooked, season with salt and pepper to taste and serve hot. The chicken can be served whole, or shredded and returned to the pot to soak up more sauce.
