Peanut Butter Bars
2 ½ cupsflour
½ tspbaking soda
1 tspsalt
½ cupunsalted butter
room temperature
½ cupsmooth peanut butter
½ cupsugar
1 cuplight brown sugar

Peanut butter filling
½ cupsmooth peanut butter
3 Tbspbutter
room temperature
1 cuppowdered sugar
2 Tbspheavy cream
½ tspvanilla

Instructions
Step 1
Preheat oven to 350 degrees and spray a 8x8 baking pan and lime with parchment paper.
Step 2
In a medium bowl whisk the flour,baking soda, and salt. Set aside.
Step 3
In a large bowl beat butter and peanut butter until smooth. Add both sugars and beat on medium high until pale and fluffy. About 2-3 minutes.
Step 4
Reduce the speed and add the eggs and vanilla. Best until just combined.
Step 5
Add the flour mixture and mix until just combined.
Step 6
Place dough into the prepared pan and press down to flatten slightly.
Step 7
Bake for 30 minutes or until lightly browned and mostly set. Oven times may vary so watch it carefully.
Filling
Step 8
Beat butter until creamy. Add the peanut butter and best until well combined (2-3 minutes)
Step 9
Add sifted powdered sugar in one 1/2 cup at a time and beat until combined. Add vanilla.
Step 10
Add the cream 1 tbsp at a time until desired consistency. Beat on high for 3 minutes until fluffy.
Step 11
Now let’s assemble: spread the peanut butter filling into the well of the dough and spread the fluff on top.
Step 12
Serve at room temperature and eat within 2-3 days or freeze for up to four weeks.
