Instructions
Step 1
Heat butter and olive oil in Dutch oven over medium heat. Once melted add carrot, onion and celery. Sauté for about five minutes then add garlic, thyme, rosemary, salt and pepper. Sauté for about a minute until garlic is fragrant.
Step 2
Add flour and stir until it has completely coated veggies. Add wine and stir until it becomes a very thick mixture.
Step 3
Slowly add broth while stirring constantly. Add chicken breast and bring to a simmer.
Step 4
Simmer for about 20 minutes, until chicken reaches an internal temperature of 160. Remove chicken and add noodles and parsley.
Step 5
Shred chicken and add back into soup. When noodles are nearly done add frozen corn and cook a minute or two longer. Taste and add salt and pepper to desired taste
Step 6
Serve hot with crusty bread.
