¾ cupmayonnaise
¼ cupsour cream
2 TablespoonsHot Sauce
Calabrian Chili, or to taste
1 tablespoonhoney

1juice of lime

or meat protein of choice
1 CupCheddar Cheese
shredded, divided
1 CupMonterey Jack Cheese
shredded, divided
everything bagel seasoning

Instructions
Step 1
Preheat the oven to 400ºF.
Prepare the Bacon
Step 2
To prepare our bacon, you can cook it with your preferred method. My method for cooking the bacon is to prepare it in a skillet. Heat the skillet to medium heat on the stove. Once the skillet is hot, add in our bacon and cook in batches. Cook the bacon on one side for 1-2 minutes or until it is crispy, then flip it over and repeat. Once the bacon is crispy and fully cooked, remove it from the skillet.
Prepare the Eggs

In a bowl, crack all of the eggs in and whisk together until smooth.
Step 4
Heat a skillet to medium-low heat and add in cooking oil or use about 1-2 tablespoons of grease from cooked bacon. Once the oil is hot, add in whisked eggs. Slowly stir eggs continuously as they cook. Once the eggs begin to form their shape as they are cooking, season with salt and black pepper to taste. Once the eggs begin to hold their shape, remove from heat to prevent from overcooking the eggs.
Assemble Sandwiches to Bake

Slice open the croissants down the middle and place on a parchment lined baking sheet.
Step 6
Add on our ingredients in layers by adding on shredded cheese, bacon, eggs, and more shredded cheese. Make sure to evenly divide ingredients amongst each croissant.
Step 7
Lightly brush the tops of each croissant with egg wash. To make the egg wash, in a small bowl combine 1 egg & 1 tablespoon of whole milk and mix together. Optional, you can sprinkle on everything bagel seasoning on the top of each of croissant after applying the egg wash.
Step 8
Bake in the oven for 10 to 12 minutes or until golden brown and crispy. Once done, remove from the oven. You can enjoy the sandwiches as is or add on the creamy Calabrian chili sauce.
Prepare Creamy Calabrian Chili Sauce
Step 9
In a mixing bowl, add in mayonnaise, sour cream, honey, juice of 1 lime, Calabrian chili hot sauce, and a pinch of salt to taste. Whisk together until smooth. Apply to the croissant sandwiches as desired.
