Ingredients
12 servings
10eggs
1 poundground turkey breakfast sausage
16 ouncesreduced fat cottage cheese
8 ouncesreduced fat shredded cheddar
½ cupgrated parmesan cheese
1onion
small, diced
1bell pepper
medium, diced
12 ouncesfrozen spinach
thawed and drained
2sweet potatoes
medium, peeled and diced
1 tspsalt
½ tsppepper
1 ½ tspgarlic powder
1 tsponion powder
0.5 bunchscallions
diced
Instructions
Step 1
Break up and sauté breakfast sausage until well browned
Step 2
Cut up and/or prepare all veggies
Step 3
Break eggs into large bowl, season well with all seasonings.
Step 4
Add all ingredients into bowl and stir very well.
Step 5
Pour into a 9x13 well greased baking dish and bake at 375 for 50-60 minutes, or until a toothpick comes out clean. Serve hot.
