Instructions

Step 1
Crack the 4 eggs then separate the yolks carefully from the whites

Add the whites to a mixing bowl with a pinch of salt black pepper and a small squeeze of lemon juice . Whip with an electric mixer for a few minutes until the whites are stiff and fluffy

Add half of the grated Parmesan and carefully fold it in to to egg whites

Step 4
Divide the egg whites between 4 greased ramekins then use a spoon to make a little crevasse in the centre of each . Place in a preheated oven and Bake at 180 c / 360 f for about 6 minutes or until you see the egg starting to turn golden

Step 5
Carefully put the egg yolks into the centre of the egg white add the remaining cheese and dill then bake for another 1-2 minutes until the yolk is the desired consistency. Serve on a bed of rocket and enjoy
