Step 1
Preheat oven to 350. Spray your 9x13 baking dish with cooking spray. Layer your biscuits on the bottom of pan and squish down to cover the bottom.
Step 2
Par bake the biscuits for 12 minutes in oven.
Step 3
Add onions and pepper to frying pan and cook until soft. Set in a bowl to the side.
Step 4
Brown your ground beef. Drain grease
Step 5
Add in taco seasoning to your meat. Mix until well incorporated
Step 6
Add your pepper/onion mix and your can of diced tomatoes with green chilies. Cook until bubbly
Step 7
In a bowl, mix together sour cream, mayonnaise and 3/4 cup cheese.
Step 8
Take your pan with par baked biscuits when 12 minutes are up and press down the biscuits before layering.
Step 9
Pour your meat mixture over top of your biscuits and spread until even.
Step 10
Spread your sour cream/mayo/cheese mix over your meat evenly. Top with the rest of the cheese.
Step 11
Cover with aluminum foil and place back in oven (still at 350) for 30-35 minutes
Step 12
Remove foil and Broil for 1-2 minutes or until cheese is browned and bubbly.
