Instructions

Step 1
In the large bowl of a stand mixer combine yeast, sugar, cardamom, one cup of flour, and the water. Whisk gently and cover with a tea towel to rest for about 5 minutes to prove yeast.

2. After bubbles have formed add the remaining ingredients Start with the olive oil, then the flour (reserving 1/2 cup of flour for later), and then the salt.

3. Fit the mixer with the dough hook attachment and knead the dough on low speed for 2-3 minutes. Add in the remaining flour until the dough pulls away from the sides.
Step 4
4. Place the dough onto a floured surface and shape it into a ball. Using a kitchen scale, weigh the dough and divide that number by 12. Divide dough into 12 equal pieces.
Step 5
5. Shape each piece of dough into a ball by hand, smoothing and rounding it. Place them on a silicone-lined baking sheet.
Step 6
6. Gently press down on each bun to slightly flatten them. Cover with a tea towel and let the buns rest for 30 minutes while the oven preheats.
Step 7
7. As the buns are resting, preheat the oven to 218C.
Step 8
8. Brush the tops, score and sprinkle with seeds if desired. Bake the buns for 9-11 minutes. The tops should be golden brown.
Step 9
9. Cool on the baking sheet for 2 minutes then transfer to a cooling rack to cool completely.
