WIP: Ultimate homemade BBQ Instant/slowcooked Baby Back Ribs

This recipe can be done two ways either by slowcooking or presure cooking. Which Technique is Better?
*For a Tender and Quick Result:*
Pressure cooking is better. It’s fast and still yields juicy ribs. You can finish them off with a quick broil or air fry to get some caramelization.
*For Maximum Flavor and Texture("chew"): *
Slow cooking is excellent if you have the time. The slow and low cooking process enhances flavors and makes the meat extremely tender. Again, a quick broil can add the desired caramelization.

Pressure Cooking Method (2a):
Preparation Time: 20-30 minutes (includes preparing the rub, applying it to the ribs, and making the BBQ sauce).
Cooking Time in the Instant Pot: 25 minutes on high pressure plus the time for the pot to come to pressure and quick release (approximately 10-15 minutes for coming to pressure and a few minutes for releasing pressure).
Finishing Time in the Air Fryer/Oven: 5-10 minutes for air frying, plus a few minutes if you choose to use a torch for extra caramelization.
Total Time: Approximately 60-75 minutes.
Slow Cooking Method (2b):
Preparation Time: 20-30 minutes (similar preparations as above).
Cooking Time in the Slow Cooker: 6-8 hours on low heat or 3-4 hours on high heat.
Finishing Time in the Air Fryer/Oven: 5-10 minutes for air frying, plus a few minutes for using a torch if desired.
Total Time for Low Heat: Approximately 6.5-8.5 hours.
Total Time for High Heat: Approximately 3.5-4.5 hours.

Homemade BBQ Rub:
For the Homemade BBQ Sauce:
Instructions
1) Prepare the Ribs:
Step 1
Remove the membrane from the back of the ribs for better seasoning absorption and tenderness.
Step 2
Mix the BBQ rub ingredients in a bowl. Generously apply the rub all over the ribs, ensuring both sides are well-coated.
2a) Pressure Cook the Ribs (Quick Method):
Step 3
Mix 250 ml of water and 50 ml of apple cider vinegar in the Instant Pot. Place the trivet inside.
Step 4
Arrange the ribs in the pot, cut to fit if necessary.
Step 5
Cook on high pressure for 25 minutes, then quick release.
Step 6
Proceed to step 3.
2b) Slow Cook the Ribs (Slow Method):
Step 7
Pour 100 ml of apple cider vinegar and 200 ml of water or beer into a slow cooker.
Step 8
Place the ribs inside, either standing or lying flat.
Step 9
Cook on low for 6-8 hours or on high for 3-4 hours until tender.
Step 10
Proceed to step 3.
3) Make the BBQ Sauce:

While the ribs are cooking, combine all sauce ingredients in a saucepan over medium heat.

Simmer for 15-20 minutes until thickened. Adjust seasoning to taste.
4) Caramelize the Ribs:

Preheat your air fryer to 200°C or your oven's broiler.

Brush the cooked ribs generously with BBQ sauce.

For air fryer: Cook for 5-10 minutes until crispy.

For oven: Broil for 3-5 minutes on each side to caramelize.
5. Finishing Touch (Optional):

For an extra char, lightly torch the sauced ribs.
6. Serve:

Let the ribs rest for a few minutes, then cut into individual ribs.

Serve with extra BBQ sauce on the side.
