Spiced apple crumble cake

Instructions

For the cake

Step 1
Preheat the oven to 180 C. In a large mixing bowl mix togther the flour, sugar, baking powder, salt and spices.
Step 2
In a separate bowl combine the lemon juice and diced apple adn microwave, in minute intervals, until the apple is soft. To the warm apple mixture; add the oil, milk and vanilla essence. (The heat of the apples and the acid from the lemon juice will cause the milk to curdle a bit, don't worry, this is what we are going for.)
Step 3
Add the apple mixture to the flour mixture and whisk until just combined.
Step 4
Place the batter in a greased cake tin and top with the crumble mixture (see below).
Step 5
Bake for 25 - 35 minues until a toothpick comes out clean. The cake might be a bit mosit and soft from the apple, but will set once allowed to cool.
Step 6
Serve as is or will ice cream, custard, or a mixture of yohurt and honey. Enjoy!

For the crumble

Step 7
Mix together the flour, oats and sugar. Add the melted butter and combine well. The mixture should resemble clumpy sand.
