Instructions
Step 1
Grate the zucchini into a bowl then sprinkle with salt and set aside for a few minutes
Step 2
Add the eggs to a pot of water then bring to a boil and cook ten minutes . When they are done drain and rinse well under cool water then peel and cut into thin strips

Add a heaped teaspoon of cumin seeds to a medium high heat dry pan and toast about 2 minutes

Add olive oil to the toasted cumin seeds then Squeeze the liquid out of zucchini add it to the pan and cook for 5-6 minutes to soften
Step 5
Add the zucchini to a large plate with the strips of eggs then add lemon zest fresh parsley and season as you like with salt and pepper
