Courgettes with tomatoes

Instructions

Step 1
Heat the oil in a heavy-based casserole, add the onion and tomatoes and soften for 5 minutes. Add the garlic, paprika and salt to taste and pour in the water.
Step 2
When the sauce is simmering, add the courgettes and cook for 15 minutes.
Step 3
Remove from the heat once the sauce has reduced.
Step 4
For okra with tomatoes, heat 4 tablespoons of olive oil and fry 3 thinly sliced onions with 3 teaspoons of crushed coriander seeds for about 4 minutes, until starting to colour.
Step 5
Add 750 g (1 1/2 lb) trimmed whole okra and 4 crushed garlic cloves and fry for a further 1 minute.
Step 6
Stir in 750 g (1 72 lb) peeled and chopped tomatoes and 1 teaspoon of sugar and simmer over a low heat, stirring occasionally, until the okra is tender and the sauce has reduced.
Step 7
Stir in 2 teaspoons of finely grated lemon rind and 3 tablespoons of lemon juice and season to taste with salt and black pepper.
