Instructions

Step 1
Preheat the Oven: Preheat your oven to 180°C (350°F).
Step 2
Heat the Milk and Sugar: In a saucepan, heat the milk and sugar over medium heat, stirring occasionally, until the sugar dissolves. Do not let the milk boil.
Step 3
Whisk the Eggs: In a large bowl, whisk together the eggs.
Step 4
Temper the Eggs: Slowly whisk the hot milk mixture into the eggs, a little at a time, whisking constantly to prevent the eggs from cooking.
Step 5
Strain and Flavour: Pour the mixture through a strainer back into the saucepan. Stir in the ground cinnamon and orange zest. If using, fold in the chopped candied orange peel.
Step 6
Prepare the Baking Dish: Divide the custard mixture evenly among the ramekins or baking dishes. Place the ramekins in a baking pan.
Step 7
Water Bath: Pour enough hot water into the baking pan to reach halfway up the sides of the ramekins. This will create a steam bath for gentle baking.
Step 8
Bake: Bake the custards for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
