Instructions

Step 1
Preheat oven to 350 degrees
Step 2
Blitz fennel seeds in spice mill
Step 3
Dry pork with paper towel, then coat with fennel dust, salt, and pepper
Step 4
Heat oil in cast iron skillet and brown over medium high heat
Step 5
Transfer pork to a plate. Then saute garlic and fennel slices until they are golden brown

Deglaze the pan with the wine then add ghee and broth. Put the pork on top of the fennel
Step 7
Roast pork in the oven until internal temperature reads 145-150 deg f (should take 15 mins
Step 8
Rest pork separately on a plate for 15 minutes
Step 9
While the pork is resting reduce the liquid in the skillet until it is a thick sauce. Stir in lemon juice and chopped fennel fronds. Slice and serve pork over fennel
