Step 1
Cook the chicken:
In a skillet, heat the olive oil over medium-high heat. After adding salt, pepper, and paprika to the chicken, sear it for four to five minutes on each side, or until it turns brown. Take out and put aside.
Step 2
Sauté the vegetables:
Put the mushrooms, garlic, and onion in the same pan. Simmer until tender, about 5 minutes. To thicken the sauce, add the flour and whisk for one minute.
Step 3
Deglaze and Simmer:
Add chicken broth, being sure to scrape away any browned bits. Bring to a simmer with the thyme.
Step 4
Add the cream last:
Put the chicken back in the pan, cover it, and boil it for ten to twelve minutes. Add heavy cream and boil for an additional two minutes.
Step 5
Garnish & Serve:
Sprinkle with fresh parsley and serve hot over mashed potatoes or rice.
