Instructions

Step 1
Trim brisket and rub with mustard
Step 2
Mix seasonings and sprinkle over brisket as even as possible
Step 3
Allow brisket to dry brine in fridge over night
Step 4
When ready to cook, remove brisket from fridge and let it come up to room temperature while big green egg temperature is set at 225
Step 5
Place 4-5 chunks of smoking wood and set BGE for indirect cooking with water in drip pan
Step 6
Place brisket, check and spray every hour with cider/water mixture. Until temp reaches 203 internal
Step 7
Remove from heat and rest for 45 minutes
Step 8
Wrap in cooler and allow to rest for 3-4 hours then carve
