Instructions
Step 1
preheat oven to 350 degrees
Step 2
sift together flour, baking soda, baking powder, spices, and salt into a medium-sized mixing bowl

with an electric mixer, mis the brown sugar and butter until creamed
Step 4
while the mixer is running, add the oil in a steady stream
Step 5
add the egg yolks one at a time, beating well after each egg
Step 6
add the flour mixture and buttermilk to the batter
Step 7
in another bowl, beat the egg whites until stiff peaks form, then hand-fold them into the batter little bits at a time, careful not to overmix
Step 8
spray the cupcake pan if you don't have cupcake liners. Pour the batter into the cupcake pans, filling almost all the way
Step 9
cook until they spring back after touching them, check after the first 15 or so minutes, they should pass the toothpick test
Step 10
after they've cooled, frost them and serve
