Instructions
Step 1
1. Set 2 tbs of pineapple juice from chunks aside
Step 2
2. Pour remaining pineapple juice & soy sauce into crockpot, then add chicken
Step 3
3. Add sliced/diced bell pepper on top of chicken
Step 4
4. Cook chicken in crockpot on HIGH for 3 hours or LOW for 6 hours
Step 5
5. Mix barbecue sauce, pineapple chunks, brown sugar, & 2 tbs pineapple juice.
Step 6
6. Pour mixture over chicken and cook on HIGH for 40 min
Step 7
7. Serve over rice
