Instructions
Step 1
Place berries in a 1-quart jar; set aside. Bring sugar, vinegar, and water to a boil in a small saucepan over medium heat, stirring constantly, until sugar dissolves.
Step 2
Pour sugar mixture over fruit, and gently stir. Use a wooden spoon to crush berries. Cool to room temperature, seal jar, and store in refrigerator 8 hours or up to 3 days.
Step 3
Strain berry mixture twice through a fine mesh sieve. (Shrub makes 2 cups.) For each drink, pour 3 to 4 Tbsp berry mixture into a Collins glass filled half full with ice; top with sparkling water. Store any remaining shrub in refrigerator up to 1 month.
