Step 1
1. Preheat your oven to 375°F (190°C).

2. In a mixing bowl, combine ricotta cheese, eggs, minced garlic, salt, pepper, chopped baby spinach, grated Parmesan cheese, and shredded mozzarella cheese. Mix well until everything is evenly combined.

3. In a saucepan, melt the butter over medium heat. Add flour and whisk constantly until it forms a smooth paste, about 1-2 minutes. Gradually pour in the milk while whisking continuously to prevent lumps from forming. Cook the mixture until it thickens and coats the back of a spoon, about 5-7 minutes. Remove from heat and set aside.
