Ingredients

1 Tbspbutter
3cloves garlic

1leek
large, sliced thin
2zucchinis
medium, cut in thin triangles
16 ozfrozen chopped spinach
16 ozfrozen chopped broccoli
2 tspkosher salt
1 tsppepper
1 tsporegano
for the béchamel white sauce
6 Tbspbutter
6 Tbspwhite flour
6 cups2% milk
2 tspkosher salt
½ tsppepper
1 dashcayenne pepper
¼ tspnutmeg
½ cupgrated parmesan
for the lasagna
Instructions
Step 1
In a large pan over medium heat, sauté the garlic in the butter for 1 minute then add the leeks; sauté for 2-3 minutes then add the zucchini and sauté for 2-3 more minutes.
Step 2
Add the frozen chopped spinach frozen chopped broccoli, salt, pepper, and oregano. Sauté until veggies are tender, and most of the liquid has evaporated. Set aside.
Step 3
In a lot over medium heat, melt the butter then add the flour. Cook the flour constantly for 1 minute, then slowly start to add the milk 1/2 cup at a time, whisking so the milk gets fully incorporated before adding more.
Step 4
Once all the milk is added, turn the heat up to medium high and continue whisking until the white sauce starts to bubble and has thickened slightly. Then add the kosher salt, pepper, nutmeg, cayenne, and parmesan. Turn off the heat.
Step 5
In a 9” by 13” pan, spread a thin layer on the white sauce, topped by a layer of noodles. Add half the veggie mixture, and parmesan cheese and white sauce, then another layer of noodles.
Step 6
Add the other half of the veggie mixture, along with parmesan cheese and white sauce, then one more layer of noodles. Top with Parmesan, mozzarella cheese, and fresh basil.
Step 7
Cover with foil and bake for 50 minutes (or according to noodle package directions), the. uncover and bake for 15 more minutes until golden brown and bubbly (you can broil the top if you feel it needs more colour). Let set for 5 minutes then enjoy!
