Slow-Cooker BBQ Pulled Jackfruit

This easy slow-cooker pulled jackfruit is a perfect way to feed a crowd. It cooks in the sauce, making it a one-pot meal with maximum flavour, minimum effort. Freeze any leftovers in jam jars for super easy meals

4 x 280gJackfruit
Canned
500mlbbq sauce
200mlwater
boiling
1 tsponion powder
1 Tbsppaprika powder
1 tspcumin powder
1 Tbspdijon mustard
2 Tbspmaple syrup
1 Tbspcyder vinegar
1 Tbsptomato puree
¼ tspground black pepper

Step 1
Drain the jackfruit, and combine all ingredients in the bowl of a slow cooker. Cover and cook until very tender (the jackfruit should fall apart easily with a fork!), on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours.

Step 2
Remove pulled jackfruit from slow cooker and transfer to bowl. Shred with two forks and toss with juices from the slow cooker. Serve on buns, topped with pineapple rings and grated cheese.
