Creamy Red Pesto Chicken
Creamy Red Pesto Chicken
Serve with orzo , rice or pasta
INGREDIENTS
* 5-6 chicken thighs or 2 chicken breast fillets
* 9 oz cherry tomatoes
* 2 tbsp butter
* 2 tbsp oil from sun-dried tomatoes
* 6 garlic cloves minced
* 1 small onion finely chopped
* salt and black pepper
* 1 teaspoon paprika
* 1 tsp red pepper flakes
* 2 tbsp tomato paste
* 1/2 cup heavy whipping cream
* 1/2 cup chicken broth
* 20 basil leaves
* grated Parmesan for garnish
*
red pesto (equal to 1/2 cup store-bought pesto) blend
* 1.5 oz toasted pine nuts or sunflower seeds
* 10 semi sun-dried tomatoes
* 3 tbsp oil from sun-dried tomatoes
* 1 tsp dried basil
* 1 oz grated Parmesan
* 1 tbsp tomato paste
1. Season chicken with salt , black pepper, paprika and 1 tablespoon olive oil.
2. Make pesto sauce.
3. Chop onions and garlic.
4. Add oil from the sun dried tomato jar and sear and cook chicken about 6 minutes each side on medium heat and remove from pan and set aside.
5. Sauté garlic and onions for 1-2 minutes on low to medium heat . Add cherry tomatoes and broth.
6. Add red pesto and heavy whipping cream. Let sauce cone together for 1-2 minutes on low heat. Adjust salt . Broth has salt so be mindful.
7. Tuck in the chicken. Let everything marry 1-2 minutes on low heat.
8. Garnish with basil , chili flakes and Parmesan cheese.
9. Serve over orzo , rice , pasta or mash potatoes .
