Ingredients
6 servings

4 cupschicken
shredded, cooked

2 cupsinstant rice

1 x 10.5 ouncecan cream of chicken soup

1 cupsour cream

1 cupfrozen diced onion and bell pepper blend

1 x 10 ouncecan diced tomatoes with chilies
like Tel, undrained

1 ½ cupschicken broth

1 x 1.12 ouncefajita seasoning
packet

1 x 8 ounceshredded Mexican blend cheese
Instructions
Step 1
Lightly spray a 9x13" casserole dish with nonstick cooking spray.
Step 2
In a large bowl, combine the chicken, uncooked rice, cream of chicken soup, sour cream, frozen onion and bell pepper, tomatoes with chilies, chicken broth, fajita seasoning, and about half of the cheese.
Step 3
Mix until well combined.
Step 4
Pour the mixture into the prepared dish and spread it evenly.
Step 5
Cover with tin foil and bake in the oven for 35 minutes at 350 degrees.
Step 6
Uncover, sprinkle the rest of the cheese on top and bake another 10 minutes.
