Sugar free banana creme bites for my diabetic relatives. There are many substitutes you can use if you don't have something on hand.

Step 1
Break up 6 cookies in the ziplock bag

Add the oil (binder) to the cookies
unsweetened applesauce

Spoon the cookies into the baking cups

Make the pudding according to manufactures' instructions and place in the refrigerator

Add 1/4 cup of sugar substitute and drop of vanilla extract to heavy cream and whip until stiff peaks stage

Thinly slice the banana

Layout 10 baking cups and spoon the cookies in the baking cup. Use a utensil to press down and make the cookie 'crust' firm.

Spoon the pudding in a thin layer over the cookie crust.

Place thin layer of bananas on top of the pudding layer

Place a thin layer of whipped cream on top of the banana layer

Sprinkle leftover cookie crust on top

Refrigerate for at least 15 to 20 minutes and then enjoy. These don't eat like cupcakes we eat them with a spoon. I use the muffin liners because the boys are messy. It's an easy hack for me to serve dessert in to make tidying up after eating easier.
