Step 1
1. Preheat your oven to 200°C (fan).

2. Boil the potatoes until tender, then transfer them to a 24cm baking dish lined with parchment paper and brushed with 1 tbsp of olive oil.

3. Smash the potatoes with a glass or spoon, pressing them firmly into the dish. Season with salt and pepper, then drizzle with another 1 tbsp of olive oil.

4. Bake for about 40 minutes, or until the potatoes are crispy.

5. Once the crust is ready, spread the pesto over the top, add the halved cherry tomatoes and sliced shallot, and sprinkle with mozzarella.
Step 6
6. Return to the oven and bake for an additional 10 minutes.
Step 7
7. Top with arugula, grated Parmesan, and a final drizzle of olive oil. Serve and enjoy!
