Instructions

Step 1
Start by creaming your butter, sugar, lemon zest, and vanilla until the consistency is light and fluffy, then mix in the egg.
Step 2
Add your flour, leavening agents, salt, and cornstarch. Mix until just combined, do not over mix.
Step 3
Fold in the crushed freeze-dried raspberries and white chocolate chunks.
Step 4
Scoop 2 tbsp to form balls and place on parchment paper. Freeze for 15min, and preheat your oven to 350f in the meantime.
Step 5
Bake for about 12-14min, and then let it cool down for at least 10min to set. You can store the dough (formed into balls) in the freezer and make fresh chocolate chip cookies whenever you’d like. Enjoy!
