These strawberry yogurt bites with crunchy chocolate are the perfect summer snack. You can meal prep them in advance, and they are high-protein, healthier than conventional snacks and vegan.

Instructions

Step 1
Line a baking sheet with parchment paper.
Step 2
In a bowl, mix the yogurt, strawberries, and protein powder. Divide the mixture into eight equal "blobs" and place them on the baking sheet. Put in the freezer.
Step 3
Freeze for at least 3 hours.
Step 4
Once frozen, melt the chocolate and coconut oil together in a bowl.
Step 5
Dip the frozen yogurt bites into the chocolate until covered. Place them back on the baking sheet—the chocolate will harden almost immediately. Enjoy immediately or freeze for up to 3 days.
