Instructions
Step 1
Finely chop onion, carrot and celery then mince the garlic




Step 2
Heat olive oil in a deep saucepan over medium heat

Step 3
Add chicken mince and cook until lightly browned

Step 4
Add garlic, onion, celery and carrot. Saute for 5 minutes or until softened
Step 5
Add tomato paste and cook for another 2 minutes, until darkened in colour

Step 6
Add pasta sauce, stock, salt and pepper. Bring to a boil and cook over medium heat for 10 minutes, stirring occasionally




Step 7
Add the cream and simmer for a minute, then add the tortellini, baby spinach and basil. Cook for 2 minutes or as per packet instructions. Serve
