Step 1
Get a large bowl then add a strainer and a muslin cloth and add the yogurt to it to strain it . Let it sit covered with the cloth 30 minutes for the whey to drip out
Step 2
When the whey stops dripping pull up the sides of the cloth and gently squeeze as much whey out as you can
Step 3
Add the creamy cheese ( and any herbs or seasonings you like ) to a sterilized container with a lid and pack it down firmly . You can use straight away or let it get firmer in the fridge . Use within 7-9 days
