Instructions
Step 1
Add the milk to a pot over medium low heat and bring it to a boil.
Step 2
Turn the heat off and add the juice of 1 lemon, give a nice stir and cover with a lid for 10 mins. At this point you should see some cheese curdles forming. If not, add some more lemon juice.
Step 3
Transfer your cheese curdles on a sieve and press gently to remove all the excess moisture. Add your drained cheese curdles in a food processor, season with salt and mix for 30 seconds or until creamy.
Step 4
Transfer your cream cheese on an airtight container covered with parchment paper and rest in the fridge for a couple of hours. Spread your cream cheese on some toasted bread, use it for pasta sauces or for your favourite preparations. Buon appetito!
