Step 1
Cream the butter in an electric mixer, adding flour and sugar, mixed together by spoonfuls with the mixer still running, finishing up with the almond extract. Mix in the ground almonds with a fork.
Make balls of dough the size of walnuts with your hands and flatten slightly with your fingers.
Bake in a preheated 300 degree oven on an ungreased cookie sheet, watching carefully, for 15-20 minutes. Do NOT allow to become too brown.
Remove from the cookie sheet and cool on an open rack. When completely cool, roll in additional powdered sugar, and place in a tin with a tight lid to store, using wax paper or plastic wrap between layers of cookies.
